Bakery By Pei is a home bakery in Singapore, specialising in sourdough.

Why Sourdough?

All our bread are slow-fermented with natural sourdough without the use of commercial yeast. Therefore, each loaf of bread takes more than 16 hours to produce. 

There are natural health benefits from naturally leavened, sourdough bread.

𝟭. 𝗕𝗲𝘁𝘁𝗲𝗿 𝗻𝘂𝘁𝗿𝗶𝗲𝗻𝘁 𝗮𝗯𝘀𝗼𝗿𝗽𝘁𝗶𝗼𝗻

Wild yeast helps to release essential minerals such as calcium, magnesium, iron and zinc in most bread to be absorbed readily into our body. 

𝟮. 𝗥𝗲𝗴𝘂𝗹𝗮𝘁𝗶𝗻𝗴 𝗼𝗳 𝗯𝗹𝗼𝗼𝗱 𝘀𝘂𝗴𝗮𝗿 𝗹𝗲𝘃𝗲𝗹

Wild yeast feeds on glucose during the fermentation process and the ultimate sourdough bread therefore does not cause as much spike in blood sugar level as compared to commercial white bread.

𝟯. 𝗘𝗮𝘀𝘆 𝗱𝗶𝗴𝗲𝘀𝘁𝗶𝗼𝗻

The long fermentation process breaks down gluten proteins into amino acids, making sourdough a good option for those who are sensitive to gluten or have digestive problems.

A Gift of Time and Patience

Only small batches of bakes can be accommodated in our little home kitchen. Every bake requires time and patience due to the long fermentation of sourdough.
